This is a very serious issue for founders in California, Texas, and other community property states.
Looks like Gust has the same issue:

That's not how tax law works. When you found a company you buy founder's stock, with an initial valuation filed with the IRS and this is the value until the next qualified valuation event, where it may change. Share prices of $0.01 to $0.00001 are common. I guarantee that $0.001 was the founders share price filed with the IRS at company formation.

Then now comes another provider called Gust (gust.com) that offer different products that are equally attractive.
This has a product called Gust Launch (https://gust.com/launch/start) which has features like Clerky including a financial board of the company so it sounds interesting but the cost is $300 dollars annually (there is includes the incorporation, post, etc), Clerky is a single payment of $800 dollars and Stripe Atlas $500.

Have you considered creating a platform such as http://gust.com/en/ with your design features and the possibility to share links for start-ups? Its free for start-ups (and they can share url links with their contacts) but once you have enough pitches, investors pay to browse through the platform and identify/contact projects relevant to their investments strategies.

Disclaimer: I work at Gust.
That said, https://gust.com/launch/comparison/delaware-corp-vs-llc will give you a good idea of the trade-offs and considerations. Based on the homework we've done, C-Corp is a cost- and paperwork-competitive choice if you want to leverage equity for funding or employee incentives.
In terms of changing from LLC to C-Corp, statutory conversion is relatively straightforward especially if you structure your original LLC with future conversion in mind (choose a state that supports statutory conversion, understand how membership interest will convert into shares). I _think_ Stripe Atlas might still offer an LLC with an easy conversion path. Some more info on different ways to manage the change here: https://gust.com/launch/faq/articles/i-already-have-an-llc-do-i-have-t… (some Gust specific info in there, but most is general purpose).

> This is basically saying, "Let's package together a bunch of volatile high-risk, high-return investments in a completely unregulated market and sell that to people".
1. Your "unregulated market" claim is baseless. This fund, which is no different than any other venture capital fund, has registered with the SEC in accordance with Regulation D. You can find the filing on the SEC website.
2. Angel investing is not exactly "high-return" these days. See http://gust.com/blog/2012/03/27/the-reality-of-returns-on-angel-invest… and http://rightsidecapital.com/assets/documents/HistoricalAngelReturn.pdf for some data points. For reference, the S&P 500 gained nearly 30% last year.
3. In regards to your overall concern that people are being sold "volatile high-risk, high-return investments", consider that there are variety of leveraged products, including triple-leveraged ETFs and double-leveraged ETNs yielding 15-20% annually, that retail investors can purchase on major stock exchanges. Notwithstanding the fact there's nothing inherently wrong with "volatile high-risk, high-return investments" and there is a place for them in many portfolios, picking on a tiny pseudo-fund of funds targeting accredited investors is not the most effective way to make your argument.
4. As for "Silicon Valley financiers are beginning to think like Wall Streeters", the notion that Silicon Valley venture capital has somehow existed in isolation until now is simply not accurate. That said, my…
